fajitas1My kids love mexican food and I love making it because the dishes are usually inexpensive to make and full of flavor. Tacos are always a hit with the kids and easily one of their top three meals but I can only eat tacos so often. Fajitas, to me at least, are a step up in the culinary world because you get to use steak and, who doesn’t like steak?  Another reason fajitas are an easy go-to meal is that once again you can add in veggies and make them a meal all in one little tortilla. You may be noticing a theme here in these posts, I like easy meals that are also healthy for our family. Plus it seems that my kids are more apt to eat their veggies when they are mixed in with other things instead of in a pile on their plate by themselves.

Because steak is the main ingredient in fajitas you need to make sure you are working with quality beef and one sure way to do that is to use Canadian Beef.  There are plenty of fajita recipe out there but this one from Canadian Beef is about as easy as they come. For this recipe you can use a marinating steak (i.e. Inside Round or Sirloin Tip) cut into strips.  You do not have to allow tons of time for marinating with these, maybe 10-15 minutes. After that, stir-fry the meat for 7-8 minutes. You can then throw in whatever veggies you want to the mix. I usually use whatever I have from other recipes during the week. We added some red bell peppers, green bell peppers, onions and mushrooms. Just stir fry long enough to soften the veggies a little, you don`t want them too soft. Heat up your tortillas and you are done. Serve with cheese, guacamole, and sour cream. Yum.

1 lime (grated peel and juice)
2 tbsp (30 mL) orange juice
2 tsp (10 mL) minced garlic (2 cloves) or 1 tsp (5 mL) garlic powder
2 tbsp (30 mL) mild or medium chutney
½ tsp (2 mL) cumin
1 lb (500 g) Beef Stir-fry Strips or Marinating Steak (i.e. Inside Round or Sirloin Tip), cut in strips
8 flour tortillas (6-inch/15 cm diameter) or flavoured wraps
½ cup (125 mL) shredded Cheddar cheese (optional)
½ cup (125 mL) guacamole or sour cream (optional)
Grilled sweet red pepper and red onion strips (optional)
  1. Combine lime peel and juice, orange juice, garlic, chutney and cumin in shallow dish. Add beef strips; cover and marinate for 10 to 15 minutes.
  2. Wrap tortillas in foil; heat in non-stick frying pan over medium heat for 5 minutes, turning once. Remove from pan and turn heat to high.
  3. Drain beef strips; stir-fry for 2 to 3 minutes. Top warmed tortillas with beef strips, cheese, guacamole and grilled vegetables (if using); fold up to eat.
