It’s week 3 of the #CarlsCrew challenge. And this week Carl is challenging everyone to try a new vegetarian meal. If you’re stuck for ideas, here’s one from our team, just in time for fall.
Squash Casserole
Ingredients:
- 4 cups cooked squash or pumpkin – mashed or small cubes
 - 1 Tbsp olive oil
 - 1 cup chopped onion
 - 1 tsp salt
 - 2 small bell peppers – minced (try using one red, one green)
 - 4-5 cloves garlic – minced
 - black pepper and cayenne to taste
 - 1/2 cup plain yogurt
 - 1 cup feta cheese – crumbled
 
To Make:
- Heat olive oil in a medium sized skillet
 - Add onions and sauté for 5 minutes
 - Add bell peppers and salt, sauté 5 minutes
 - Add garlic, black pepper, and cayenne, stir well
 - Remove from heat
 - Stir in the squash or pumpkin, yogurt, and feta cheese
 - Spread into a 9×9 inch pan
 - Bake for 25-30 minutes, until it begins to bubble
 - Optional – top with roasted pumpkin seeds or walnuts
 - Serve and enjoy
