It’s week 3 of the #CarlsCrew challenge. And this week Carl is challenging everyone to try a new vegetarian meal. If you’re stuck for ideas, here’s one from our team, just in time for fall.

Squash Casserole

Ingredients:

  • 4 cups cooked squash or pumpkin – mashed or small cubes
  • 1 Tbsp olive oil
  • 1 cup chopped onion
  • 1 tsp salt
  • 2 small bell peppers – minced (try using one red, one green)
  • 4-5 cloves garlic – minced
  • black pepper and cayenne to taste
  • 1/2 cup plain yogurt
  • 1 cup feta cheese – crumbled

To Make:

  1. Heat olive oil in a medium sized skillet
  2. Add onions and sauté for 5 minutes
  3. Add bell peppers and salt, sauté 5 minutes
  4. Add garlic, black pepper, and cayenne, stir well
  5. Remove from heat
  6. Stir in the squash or pumpkin, yogurt, and feta cheese
  7. Spread into a 9×9 inch pan
  8. Bake for 25-30 minutes, until it begins to bubble
  9. Optional – top with roasted pumpkin seeds or walnuts
  10. Serve and enjoy
